By Todd Appel, Crimson Lounge and Piranha Bros Bar Catering and Consulting,

- 1 ½ oz. Mathilde Poire 
- 1 ½ oz. Fresh Pear Puree 
- 1 oz. Fresh Chopped Pear 
- Champagne 

In a mixing glass stir all ingredients over ice except champagne. Pour over ice in tall Collins glass and top with champagne. Garnish with lemon twist and long straw.
